TECHNOLOGICAL DEVELOPMENT

The training workshop in its state today is only suitable for presenting an out-of-date technology of brewing for our students. In order to get to know the modern brewing technology used in the industry at the moment, our equipment, at least partly, should follow the development of our profession. We can have energy-reclaiming systems, modern filtering technology and constant quality management in mind.

Beer manufacturing is only one of the many branches of fermentation industry and its theoretical topics for education, thus students and other people taking part in professional training programs can learn about other fermentation processes only from books, drafts or drawings until they face the challenges of real work. That is why it is very important for them to get familiar with the process of manufacturing fruit brandy (pálinka), liquor and malt on small-scale manufacturing units. This will also be useful for acquiring theoretical and practical knowledge making sure that the educational program provides our students with a complex knowledge that has an exceptional value on the labor market.

MAJOR THECHNOLOGICAL EXPANSION

MALT PRODUCTION NOT ONLY IN THEORY

Malt production is a complex process. Its end product will be a fundamental part of each and every process of beer-making (or fermented drinks made from cereal). That is the reason why it is important for the students to get acquainted with the steps of this process, the effects during production that can alter the end product made from these materials and the principles of its operation. The knowledge they get here can be used widely in this industry.

Creating this device needs a lot of planning and innovation from our team since we have to reproduce a huge malt factory in such a small size that will fit into the training workshop. Yet it has to be the right size so that students can use its end product to make beer from. This would open a whole new dimension in brewing at Bercsényi.

DISTILLATION – LIQUOR AND FRUIT BRANDY (PÁLINKA) PRODUCTION

If we talk about fermentation, we cannot leave the ever popular fruit brandy (pálinka) production and the well-known liquor production out from this picture. Placing a pot still would ensure that the students can get familiar with the process of (fruit) fermentation, the secrets of distillation, the importance of aging, and the production of spirits and liquor. It is also our objective to be present at the annual food fairs, shows, competitions. This way the school could widen its product range with several liquors.

If the foundation can raise enough money, we will be able to buy a stilling device because there are several manufacturers in Hungary who have a wide range of these distilling devices.   The only important requirement in connection with the equipment is that students can follow the process of distillation as well as possible.

All news items in connection with development are published in the Blog section of the site. There are articles about our fundraising activity, about our activity in connection with the annual grants and tenders, the documents presented for these grants, and the work related to these projects. All preliminary work, the whole procedure and the results in connection with the reconstruction (choosing the location, the technology and the contractor) will be published.
